Chicken and Waffles
Since never having the non vegan version of this, I was less than enthusiastic to Veganize it. SO happy I did, what a delicious combo of Sweet & Savory! The Chicken came out nice and crispy!

Ingredients
2 Flax Eggs ( Each Egg is 1 Tbsp Ground Flax mixed with 3 Tbsp Water)
1 1/2 cups Unsweetened Cashew Milk
1 Tbsp of @bragglivefoodproducts Apple Cider Vinegar
1 1/2 cups of @bobsredmill AP Flour
1 Tbsp of Baking Powder
1/2 tsp of Salt
3 Tbsp of Sugar
5 Tbsps of Vegan Butter
2 tsp of Organic Vanilla
CHICKEN
1 pkg @gardein Chicken Scallopini
EGG WASH
2 Tbsp of @followyourheart Vegan Egg mixed with 1/2 cup cold water
FLOUR MIX
1 1/4 cup @kentucky_kernel Seasoned Flour (you can use AP flour with a bit of Salt, Pepper and Cayenne added to it)
1/4 cup @bobsredmill All Purpose Flour
2 tsp of @frontiercoop Organic Poultry Seasoning
MILK
1 cup @lovemysilk Unsweetened Cashew Milk with 2 tsps of Apple Cider Vinegar
Directions
1. Mix wet ingredients separately from dry
2. Combine the two together and and let stand for about 5-10 minutes before cooking on a waffle iron
3. Cut each Chicken Patty into two
4. Dip in milk
5. Dredge in Seasoned Flour
6. Dip in Egg Wash
7. Dredge again in flour and add to hot oil (365 degrees)
8. Fry for about 5 minutes or until golden brown
