Roasted Cauliflower Steaks w/ Pesto

Roasted Cauliflower is one of my favorite things! This is an incredibly easy recipe for a delcious meal or side dish. The pesto will make more than enough for two heads of Cauliflower or to use in some Pasta.

Serves 2-4 (double up the amount of Cauliflower)


 
 

Ingredients

1 Large Head of Cauliflower

2 tsp of Grape Seed Oil

Salt & Pepper

Pesto Ingredients

2 cups of Basil Leaves

1/3 cup Pine Nuts

1/2 - 2/3 cups of grated Vegan Parmesan ( I like Follow Your Heart & Violife brands)

2 cloves of Garlic

1 tsp of Lemon Juice

1/4 - 1/3 cup Grape Seed Oil

Salt & Pepper to taste

Directions

1. Wash and core out as much of the Cauliflower as you can with still keeping the head intact

2. Lightly rub a bit of Oil on the Cauliflower and season with Salt & Pepper.

3. Place the Cauliflower on a sheet pan and bake at 375 for 1 hour

4. While the Cauliflower is baking make the pesto

5. In a food processor, combine all the ingredients except the Oil together and pulse until everything is minced

6. With the processor running, slowly add in the Oil satrting with 1/4 cup until the mixture is loose but has a paste like consistency

7. Allow the Cauliflower to cool a bit before cutting into slices

8. Serve with the Fresh Pesto
