Roasted Cauliflower Daal
Roasted Cauliflower Daal
I love Daal but I also love to sometimes add new flavors and textures. Adding the roasted Cauliflower gives the Daal a bit more smokiness and wonderful texture to the creamy lentils.
Ingredients
1 cup of Red Lentils
1 can of Chopped Tomatoes
1/2 head of Cauliflower or about 2 cups Roasted Cauliflower
1/2 Small Onion
2 cloves of Garlic
2” Knob of Ginger
Fresh Cilantro chopped
1/2 tsp of Umami Seasoning ( I use Trader Joe’s)
2 -3 tsp of Sweet Curry Powder ( I use one from The Spice House)
1 tsp of Corriander
1/2 tsp of Turmeric
2 1/2 cups of Water
1 can of Coconut Milk ( I like Thai Kitchen)
Directions
1. Cut the Cauliflower into florets, coat with a tiny bit of oil (optional) and season them with Salt & Pepper. Roast them at 375 for about 25 minutes or until tender and browned
2. In a large pot, Sauté the Onion, Ginger and Garlic until the Onions are translucent
3. Add in the Tomatoes and Spices and cook on med-low heat for about 10 minutes
4. Add in the Lentils and 2 cups of Water. Mix well, cover and continue to coook for 20 minutes. Check on them half way through cooking and add more water if needed.
5. Once the Lentils are soft and have almost completely fallen apart, add in the Roasted Cauliflower & Coconut Milk. Lower the heat and continue to cook covered for another 20 minutes
6. Add in the chopped Cilantro and serve with Rice
