Bruschetta with Feta
I love the combination of juicy tangy Balsamic Tomatoes, mixed with Fresh Herbs and Creamy Feta! It goes perfectly with the crunch of Grilled Buttered Bread. Perfect for a light Lunch or even for Breakfast!
Serves 2-4
Ingredients
4 Slices of a hearty crusted Bread
1 Tbsp Vegan Butter melted
1 cup Baby / Cherry Tomatoes cut into quarters
About a 1/3 cup crumbled Vegan Feta ( I use Violife)
1/3 cup Fresh Basil chopped
1/3 cup Fresh Parsley chopped
1 Slice of Red Onion finely choppe
1 Garlic Clove minced
2 tsp of Grape Seed Oil
1 1/2 tsp of Aged Balsamic Vinegar (Trader Joe’s has a really nice one that’s inexpensive)
Salt & Pepper to taste
Directions
1. Mix together the Tomatoes, Fresh Herbs, Onion, Garlic, Oil, Vinegar, Salt & Pepper and set aside
2. To grill the bread: brush both sides with melted butter and grill on a grill pan until nice and toasted and there are good grill marks on either side.
3. Toss the crumbled Feta into the Tomatoes and mix well
4. Rub a bit of Garlic on the Toast before topping with the Bruschetta mix
