Sumac Roasted Cauliflower & Chic Peas

If you’ve been following this website/blog for a bit then you know I love roasted vegetables specially roasted Cauliflower! I’m always thinking of new flavors and combinations to cook it up with. This easy sheet pan roasted Cauliflower and Chic Peas is so full of flavor inspired by the spices of middle eastern cuisines. It can be enjoyed as a meal on its own or as a delicious side dish. It’s served with a cool mint yogurt and to make it fun you can add in some pomegranate arils for that little sweet pop.

Serves 2-4


 
 

Ingredients

1 head of Cauliflower
15 oz (425 g) Chic Peas
small Onion cut into half moons
2 tsp (10 g) Ground Sumac
2 tsp (10 g) Aleppo Pepper
1 1/2 tsp (7.5 g)Cumin
1/2 tsp (2.5 g) Smoked Paprika
4 Tbsp (60 ml) Avocado Oil
5.3 oz (150 g) Vegan Greek Style Yogurt
2 Tbsp (30 g) Vegan Sour Cream
2 tsp (10 g) fresh Mint chopped (plus more for garnish)
1 tsp (5 ml) Lemon Juice
Salt & Pepper to taste
Oprtional: 1/4 cup (43.5 g) Pomegranate Arils for garnish

Directions

1. Prepare the cauliflower by washing it and then cutting into large florets.Cut the onion in half lengthwise and then slice to make half moons.

2. Add the drained and rinsed chic peas to a large bowl along wiht the cauliflower and onions.

3. Mix together the cumin, sumac, aleppo pepper, salt, black pepper and smoked paprika with the oil. Pour the spiced oil over the vegetable mix and make sure eveything is thoroughly coated.

4. Spread the mixture onto a baking sheet in a single layer and bake at 375 for 35-40 minutes or until the cauliflower is roasted and the chic peas are slightly crunchy.

5. Mix together the yogurt, sour cream, lemon juice and chopped mint.

6. Serve with mint yogurt and garnish with optional pomegranate arils and more mint.
