Miso Sesame Noodle Salad
This is a very refreshing and delicious dish specially when served cold! There’s a great mix of textures between the noodles and the crunchy veggies. I used a mix of Udon Noodles but you can certainly use spaghetti or angel hair pasta.
Ingredients
1/3 package of Udon Noodles ( I used Koyo Brand)
1/4 of the box of Chlorella Udon Noodles ( I used Sun Chlorella Brand) You can use all regular Udon or try mixing Black Rice Udon for color contrast
1/4 cup chopped Cucumber
3 Medium Radish sliced
1/3 cup Shelled Edamame
2 Green Onions sliced
1 -2 tsp of Black Sesame Seeds
Fresh Cilantro Leaves
2 tsp of Marukan Rice Vinegar
2 tsp of Low Sodium Tamari ( I use San-J)
1 tsp of Beefree Honee
1 Tbsp of Mellow White Miso Paste ( I use Cold Mountain)
1 Tbsp of Toasted Sesame Oil
1 tsp of Water to thin if needed
Salt & Pepper to taste
Directions
1. Cook the Udon or other pasta according to package directions. Rinse in cold water and let dry a bit
2. Mix together the Miso Paste, Rice Vinegar, Tamari, Beefree Honee, Salt & Pepper first and then mix in the Toasted Sesame Oil unti well combined. If needed use a tsp of water to thin it. Set aside
3. Slice the Green Onion, Radish and defrost the Edamame
3. Toss the Vegetables and Noodles together
4. Pour over the Miso Sesame Dressing
5. Garnish with fresh Cilantro leaves and Black Sesame Seeds
