Sesame Ginger Edamame Crunch Salad

This is a great little salad for when you want something fresh, crunchy and easy! I love all of the textures together served with noodles but this salad would also be great with any type of greens. The Sesame Ginger dressing is creamy, flavorful and goes perfectly. I find this dish makes the perfect lunch and with a little extra Vegan protein added such as Chick’n or Tofu, it would be a great dinner.

Ingredients

1 1/2 cups (250 g) of shelled Edamame
2 1/2 cups (150 g) Red Cabbage
1/2 large Cucumber sliced
1 large Carrot julienned
4 Radish sliced then cut into strips
1 package (100 g) of Ramen Noodles
Toasted Sesame Seeds for topping

Sesame Ginger Dressing
2 Tbsp (30 g) Toasted Sesame Seeds
1” Knob of Ginger
1 -2 Cloves of Garlic
1 Tbsp (15 ml) Toasted Sesame Oil
1 Tbsp (15 ml) Rice Vinegar
1 Tbsp (15 ml) Maple Syrup
1 Tbsp (15 ml) Soy Sauce
1 Tbsp (15 g) Miso Paste
1/4 cup (60 ml) of Water
Salt & Pepper to taste

Directions

1. Make the dressing by adding the ginger, garlic, miso paste, rice vinegar, soy sauce, maple syrup, sesame seeds, salt, pepper and water to a high speed blender. Blend until everything is completely creamy. Set aside.

2. Bring a large pot of water to boil and cook the edamame for 2 minutes until tender. Remove the edamame with a slotted spoon or spider and submerge them in ice water to stop them from cooking, drain and set aside.

3. Cook the ramen noodles according to package directions. Set aside.

4. Prepare the fresh veggies by cutting the carrot into thin julienne strips, chop the cabbage into thin shreds and slice the radishes into little strips. Add all of the cut vegetables to a large bowl.

5. Cut the cucumber in half lengthwise and using a spoon, remove the seeds. Cut each half into thin slices. Thinly slice the green onions and add them along with the cucumber to the bowl.

6. Add the cooled edamame and cooked noodles to the bowl. Pour the dressing over everything and mix well until everything is well coated. Serve with additional sesame seeds on top.
