Chinese Chicken Salad
Very crunchy and full of flavor. This salad has a mix of crisp Lettuce, crunchy Cabbages, Almond Slicess and juicy Mandarin Oranges all dressed with a bright and yummy Sesame Dressing!
Makes 2- 4 servings
Ingredients
3 cups of chopped Romaine Lettuce
2 cups chopped Cabbage Slaw Mix ( you can also make your own with Red & Green Cabbage and Shredded Carrots)
1 Package of Gardein 7 Grain Crispy Tenders
3 Green Onions sliced
1/3 cup chopped Cilantro
1/2 cup Sliced Almonds
1/2 cup dry Chow Mein Noodles ( I used La Choy brand)
1 can of Organic Mandarin Oranges
Salt & Pepper to taste
Black & White Sesame Seeds to garnish
Sesame Dressing
1/3 cup Rice Vinegar
3 Tbsp of Tamari
2 -3 Tbsp of Toasted Sesame Oil
1 tsp of Beefree Honee
2 tsp of Lime Juice
Pepper to taste
1 tsp of Sesame Seeds
Directions
1. Bake the Chik’n Tenders according to package directions
2. Wash and chop the Lettuce and Cabbage Mix and add to a large bowl
3. Add in the Sliced Almonds, Chow Mein Noodles, Green Onions and chopped Cilantro
4. Mix together the ingredeints for the Dressing adding the oil last. Mix well and set aside
5. Once the Chik’n cools a bit cut into pieces and toss into the salad
6. Add in the Madarin Oranges and mix well
7. Dress the Salad with the dressing and toss right before serving.
8. Garnish with Sesame Seeds
