Grilled Peaches w/ whipped Feta & Herbs

I just adore this dish! The combination of fresh grilled Peaches and Vegan Honee nicely cuts the richness of the whipped Feta. This is truly the way to celebrate the flavors of Summer! Peaches are in season and this recipe is a perfect way to use them. This is one of the easiest deserts or honestly even breakfasts you’ll whip up. It has minimal ingredients and comes together in around 20 minutes. Leftovers if any, are delicious the next day.

Serves 3-4 (depending on the size of the Peaches)


 
 

Ingredients

2 large ripe Peaches (they should be ripe but not mushy)

7 oz (200 g) Vegan Feta ( I used Violife)

1/2 cup (112 g) Vegan Cream Cheese ( I use Tofutti brand)

1 Tbsp of Avocado Oil or other neutral Oil

2 Tbsp of fresh Mint chopped

2 Tbsp fresh Basil chopped

1/4 cup (59 ml) Vegan Honee, Agave or Maple Syrup

Equipment:

Hand Mixer (or food processor)

Grill Pan or BBQ Grill

Directions

1. Allow the Vegan Feta and Cream Cheese to come to room temperature. Using a hand mixer beat the two together until nice and fluffy. Set aside.

2. Cut the Peaches in half to remove the pit and then cut them into quarters. Brush the cut surfaces with a little bit of Oil.

3. Get your grill or grill pan hot (medium heat for a grill and a bit hotter for a pan) Brush the grill with a little Oil and place the Peaches cut side down. Allow them to cook for 3-5 minutes or until they start to give from the grill. Flip them over to the other cut side and repeat. (If the peach sticks you can re-grill that side).

4. To serve, spread about 1/4 to 1/3 of the whipped Feta on a plate. Place a few of the grilled Peaches on top. Drizzle a bit of the Vegan Honee ( or other sweetener) and top with chopped Herbs.
