Tofu Eggless Salad
 

Tofu Eggless Salad

This is my go to Eggless Egg Salad. I use it in sandwiches, salads and sometimes with crackers.


Ingredients

1 package of Tofu drained well

2 1/2 Tbsp of @followyourheart Vegenaise (add more to taste)

1 tsp of Yellow Mustard (or whichever style you prefer)

2 Ribs of Celery finely chopped

1 Green Onion sliced thin

1/2 tsp of Ground Turmeric

2 tsp of Capers with brine

1/4 tsp Kala Namak (black salt)

1/4 tsp of Smoked Paprika

Garlic & Onion Powder to taste

Salt & Pepper to taste

Directions

1. Drain the Tofu well

2. Using a fork, break apart the tofu into course pieces resembling the size of chopped egg

3. Mix the Tofu with the rest of the ingredients

4. Keep refrigerated for up to a week
