Breakfast Pizza

Breakfast and Pizza are two awesome food groups why should they be separate? Alas, I give you the Breakfast Pizza!! It’s easy as making scrambled vegan eggs. I use a store bought organic pizza crust which makes everything super easy. Oh and just becasue it’s called Breakfast Pizza don’t think this wouldn’t make a yummy dinner!

Serves 2 - 4 (I would say 2!)


 
 

Ingredients

1 Frozen Pizza Crust ( I like the organic ones from Trader Joe’s)

2 tsp (10g) Vegan Butter, melted

1/2 bottle (227g) Just Egg or other vegan egg equivalent

2 vegan Breakfast Sausage Patties (I used Gardein)

1 cup shredded vegan Cheddar

10-12 Tater Tots

Salt & Pepper to taste

Optional: Hot Sauce for serving

Directions

1. Let the sausage patties and tater tots thaw as you prep the rest of the ingredients.

2. Cook up the scrambled vegan egg, but leave it somewhat under cooked. They’ll finish cooking in the oven. Season with salt & pepper then set aside.

3. Spread out the pizza crust onto a pizza pan or baking sheet. Then, brush the melted butter all over the top of the crust.

4. Add about 3/4 of the shredded cheese to the buttered pizza and bake at 425 for 8 minutes or until the cheese has begun to melt.

5. Using the back of a spoon or spatula spread the melted cheese evenly around the pizza.

6. Arrange the toppings of scrambled eggs, chopped sausage and tater tots and the rest of the cheese around the pizza. Continue baking at 425 for 10 -12 more minutes until the crust and tater tots are golden brown.
