Bacon Breakfast Bake
One of the best breakfasts to wake up to is an easy to make, fully loaded and delicious one! This bacon breakfast bake is loaded with everything you could want!
It’s filled with hash browns, vegetables, vegan cheddar cheese, vegan egg and plenty of vegan bacon. It makes a great holiday morning breakfst as well as the perfect addition to brunch.

Ingredients
1 package (8 strips) MyBacon Plant Based Bacon
20 oz (567g) Frozen Hash Browns, thawed
16oz (454g) Vegan Egg Substitute
2 cups (180g) Vegan Shredded Cheddar Cheese
1 small (150g) Red Bell pepper, diced
1 small (150g) Green Bell Pepper, diced
1 small (250g) Onion, diced
1 tsp (5g) Onion Powder, divided
1 tsp (5g) Garlic Powder, divided
Salt & Pepper to taste
Green Onion (green part only), sliced for garnish
chopped Parsley for garnish

Directions
1.In a large skillet on medium heat, cook the bacon until crispy then set onto a paper towel lined plate to drain. Once cooled, give the bacon a rough chop and set aside. Reserve both the rendered oil from cooking as well as any unused coconut oil left in the package.
2.Using the same pan, add the reserved coconut oil from the package and on medium heat, sauté the onions, peppers along with 1/2 tsp of garlic powder and 1/2 tsp onion powder. Cook for about 5 minutes or until vegetables start to soften. Set aside.
3. Using paper towels or a clean kitchen towel, pat the thawed hash browns dry. Add them to a lightly sprayed baking dish. Spread them out evenly and season with salt, pepper and the remaining 1/2 tsp of garlic powder and 1/2 tsp onion powder. Mix well.
4.Drain off any liquid from the sautéed vegetables (set aside about 3 Tbsp for later) and add them to the hash browns. Add 1 cup of the vegan cheddar cheese shreds and 1/2 of the cooked and chopped bacon. Give everything a light mix.
5. Pour the vegan liquid egg evenly over everything and then top with the remaining cup of vegan cheese, reserved vegetables and the remaining chopped bacon.
6. Lightly, cover the baking dish with aluminum foil and bake at 365 for 55-60 minutes. Allow it to cool for 5-8 minutes before slicing and serving, top with green onions and / or chopped parsley.
