Matzo Brei

Literally means fried Mazto which is a cracker like unleavened bread eaten during the Jewish Holiday of Passover. Growing up you had to get creative with Matzo and Matzo Brei was a favorite breakfast. It’s basically scrambled Eggs with Matzo but there is something so yummy about the mix of textures. Some people like to eat it sweet versus savory so it can be made with a bit of Sugar and served with Jam or Maple Syrup. I prefer it savory which you can then add things like Onions, Veggies or even Cheese to it.

Ingredients

2 Sheets of Matzo

1-2 cups of warm Water

4 Vegan Eggs ( I used 12 Tbsp of Just Egg)

2 Tbsp (30g) of Vegan Butter

Salt & Pepper

To make it sweet: add 1 1/2 tsp of Sugar to the Egg and serve with Vegan Butter and Jam or Maple Syrup.

Directions

1. Break the Matzo in half and add it to a large bowl. Pour the Water over and let sit for about 30 -45 seconds. Drain and break the Matzo into smaller 1 1/2 “ pieces. Season with Salt & Pepper and set aside.

2. In a large skillet on med -low heat melt the Butter. Add the soaked Matzo and sauté for a minute or two or until the Matzo takes on a bit of color.

3. Season the Egg with Salt & Pepper and pour over the Matzo making sure to cover all of the pieces.

4. Slowly scramble the Egg & Matzo mixture until the Egg is fully cooked or to your desired doneness.

5. Serve as is or with Ketchup & Hot Sauce.
