Tater Tot Breakfast Casserole
As much as I enjoy a good Tater Tot I’ve often wondered how it can be better used to unlock it’s maximum yumminess.. I’ve thrown them on Pizzas and replaced Fries in Poutines which were all delicious but I wanted more from the Tot. The idea of a Casserole would come and go but I never could pin down what kind until now. Which leads us to this scrumptious Tater Tot Breakfast Casserole. It has the perfect combination of Egg, Sausage, Cheese and just the right amount of Veggies. This Breakfast Casserole is absolutely delicious and to say it didn't last long around here would be an understatement! It’s perfect to serve for a weekend Brunch but honestly easy enough to throw together any time.
Serves 4-6
Ingredients
1 cup of Onions chopped
1 cup of Bell Peppers chopped ( I used a frozen blend)
2 cloves of Garlic minced
6 Breakfast Sausage Patties chopped ( I used Beyond Meat)
1 1/4 cups of shredded Vegan Cheddar Cheese (I like Violife and Follow Your Heart)
1 bottle of Just Egg
15oz frozen Tater Tots
Salt & Pepper to taste
2 tsp of Butter to grease baking dish
2 tsp chopped Parsley for garnish
Directions
1. Sauté the Onion and Peppers until the Onions are translucent. Add the Garlic and cook until fragrant.
2. Slightly thaw the Breakfast Sausage patties before chopping and add them to the Onion and Peppers. Cook for a few minutes until Sausages are just cooked
3. Pour the Onion, Sausage and Pepper mixture ino a lightly buttered baking dish
4. Pour the Just Egg over the entire mixture, season with Salt & Pepper and sprinkle the shredded Cheese over everything
5. Lastly, layer the frozen Tater Tots to cover the top and bake at 375 for 40 - 50 minutes or until the Tots are golden brown and the Egg is cooked (it should only slightly wiggle if at all)
