Herbed Potato, Onion & Sausage Hash
This delicious and easy to make dish is the perfect companion to a tofu scramble, side of pancakes or even some grits. It uses a mix of potatoes, vegan sausage and fresh herbs. It’s a great way to use up old veg so feel free to toss in things like mushrooms or bell peppers.
Serves 4
Ingredients
1 Medium Sweet Potato cubed
2 Small Golden Potatoes cubed
2 Small Red Potatoes cubed
1 cup Onion diced
4 Breakfast Sausage Patties
1 tsp (5g) Dill chopped
1 tsp (5g) Thyme chopped
1 Tbsp (15ml) Oil for roasting
Salt & Pepper to taste
2 tsp (10g) Parsley chopped for serving
Directions
1. Toss the potatoes with a bit of oil, dill, thyme, salt & pepper. Spread out onto a baking sheet. Bake at 375 for 30 minutes or until crispy but still tender.
2.In a large pan, sauté the onions for 5-6 minutes or until translucent. Cut the sausage into smallish pieces and cook up with the onions.
3. Add the baked potatoes in with the sausage and onions and cook for a few minutes until heated through. Add fresh parsley before serving
