Spaghetti with Zucchini & Tomatoes

What’s better than a big messy plate of Pasta that you can’t wait to dig into? This Spaghetti recipe is so easy to make and so flavorful. The Garlic, Basil & Chili Flakes compliment the beautiful fresh Zucchini. Perfect for when fresh garden grown Tomatoes are in season but also delicious with a mix of canned and fresh Tomatoes that are on hand.

Serves 3-4


 
 

Ingredients

1/2 lb Spaghetti or other long Pasta

4 cloves of Garlic sliced thin

1/2 small Onion chopped

1 medium Zucchini cut in half and sliced

(1) 15oz can of chopped Tomatoes ( I used Fire Roasted but any will work)

1 cup chopped fresh Tomatoes chopped

1 1/2 Tbsp of Grape Seed Oil

Pinch of Red Chili Flakes

2 Tbsp Basil chopped

Salt & Pepper to taste

Vegan Parm for serving

Directions

1. Cook the Spaghetti according to package directions

2. In a large skillet on medium heat, saute the Onion and Chili Flakes until Onions become translucent.

3. Add in the Zucchini and Garlic and continue to cook for 6-8 minutes or until the Zucchini become tender

4. Add in the Tomatoes and let simmer until Pasta is ready.

5. Add in lightly drained Pasta and chopped Basil and mix well.

6. Cook for a few minutes to heat through. Serve with Vegan Parmesan
