Spaghetti with Beyond Meat Sauce

This recipe is always a hit in my house! The Beyond Meat makes the perfect “meaty” sauce to pour over any type of pasta and scoop up with crusty bread.

Serves 2-4


 
 

Ingredients

1 lb (552 g) Beyond Meat Ground or (4 ) Burgers
1 1/2 Tbsp Avocado or Oil of choice
1 Small Onion chopped
3 Garlic Cloves minced
2 tsp (10 g) of Oregano
2 tsp (10 g) of Basil
pinch of Chili Flakes
1 Bay Leaf
1 Tbsp (15 g) Fresh Parsley
1/3 cup (30 g) grated Vegan Parm plus more for serving (I like Follow Your Heart or Violife)
14.5 oz (411 g) of Diced Tomatoes
15 oz (425 g) Tomato Sauce
1 tsp (5 ml) of Aged Balsamic Vinegar
Salt & Pepper to taste
1/2 lb - 1 lb Pasta ( I used Bucatini)

Directions

1. In a large pot, sauté the chopped onion on med heat for 3-5 minutes or until they become translucent.

2. Add in the garlic, chili flakes and herbs and cook until fragrant (about 1-2 minutes). Add in the beyond meat and using a spatula break it apart until it crumbles. Cook for 4-6 minutes until lightly browned.

3. Add in the diced tomatoes and tomato sauce, mix well and cover the pot. Turn down the heat to low and simmer for 20 minutes.

4. Season with salt and pepper, add in the balsamic vinegar and grated parm and stir well. Cook for an additional 20 minutes on low before serving with your choice of Pasta.
