Pasta w/ Zucchini & Olives

Who doesn’t love an easy to make pasta dish? Whether it’s for a quick lunch or dinner this is the perfect delicious meal! The recipe uses mostly pantry ingredients with a few add ons for fresh vegetables. I used a combination of Castelvetrano olives which have a mild buttery flavor and Manzanilla olives which are perfectly salty. Together they add a wonderful contrast of flavors & textures that compliment the rest of the ingredients so well. The chickpeas add a bit of fiber, plant protein and help make the entire dish quite satisfying!

Ingredients
8oz (227g) Farfalline Pasta (you can use any small pasta)
1 medium Zucchini (265g) quartered and sliced
15.5 oz (439g) Chickpeas
1/2 cup (75g) Green Olives, halved (I used a mix of Castevetrano & Manzanilla)
1/3 cup (35g) grated Vegan Parmesan
1 small (155g) Onion diced
4 cloves Garlic minced
2 tsp (1-2g) Thyme, chopped
2 Tbsp (30ml) Olive Oil
1 Tbsp (3-4g) Oregano, chopped
pinch of Red Pepper Flakes
1 Tbsp Parsley, chopped
1/2 Lemon juiced
1 cup (236ml) reserved Pasta Water
Optional: 1 tsp (5g) Roasted Garlic Bouillon Base ( i use one from Better Than Bouillon)
Salt & Pepper to taste

Serve with:
grated Vegan Parmesan
chopped Parsley

Directions

1.Heat the oil in a large skillet on medium heat. Add in the onions and sauté for 5-7 minutes or until they become translucent.

2. Add in the roasted garlic bouillon base (if using) and mix well. Add in the zucchini and cook for 5-6 minutes, before adding in the garlic, oregano, thyme, and red chili flakes. Mix well and continue cooking for another 6-8 minutes.

3.Cook the pasta according to package directions. Reserve 1 cup of the pasta water. Set aside.

4. Add in the chickpeas and olives and cook for another 8-10 minutes. Add in the cooked pasta and mix well.

5. Add in about 1/3 cup - 1/2 cup of the pasta water to loosen everything up. Add more if necessary. Add the lemon juice, chopped parsley and grated parmesan and mix well.

6.Heat through before serving with additional parsley and parmesan.
