Sour Cream Banana Bread
Sour Cream Banana Bread
This is adapted from an old recipe I found online. The Sour Cream helps keep the Banana Bread super moist and Coconut Sugar makes it just the right kinda sweetness!
Ingredients
1 1/2 cups AP Flour
1 cup Coconut Palm Sugar (I like Terrasoul)
1/4 tsp of salt
1 tsp of Baking Soda
2 Flax Eggs (2Tbsp of ground Flax seeds mixe with 6 Tbsp of Water)
1/2 cup of Melted Vegan Butter (I used Earth Balance)
3 Very ripe Bananas
1/2 cup of Vegan Sour Cream ( I used Tofutti brand)
1 tsp of Vanilla
Directions
1. Make your Flax Eggs and set aside for about 5-10 minutes. Combine them with the melted Butter, Vanilla and Sour Cream
2. Mash two of the Bananas and add them to the wet mixture.
3. Mix Together all of your dry ingredients
4. Combine the Wet and Dry ingredients until well combined but do not over mix the batter
5. Pour the batter into a greased pan. Slice the last Banana and add it to the top of the batter
6. Bake at 350 for 55 minutes or when a toothpick comes out clean
