Banana Walnut Muffins

These taste just like little Banana Breads! I know some people don’t like Walnuts so they are easily left out or swapped for Chocolate Chips! These are easy to make and have a few extra special ingredients like caramelized Banana slices on top and the Sour Cream in the batter to help make them so moist.

Makes 8 Jumbo Muffins


 
 

Ingredients

3 Ripe Bananas
2 cups (240g) All Purpose Flour
3/4 cup (150g) Cane Sugar
1/2 cup (120g) Vegan Sour Cream
1/2 cup (118ml) Plant Milk
1/3 cup (76g) Vegan Butter, melted
2 tsp (10ml) Vanilla
2 tsp (10g) Baking Powder
1 tsp (5g) Baking Soda
1/4 tsp Salt

Optional: 1/3 cup (40g) chopped Walnuts or sub Vegan Chocolate Chips

Caramelized Banana

1 ripe Banana, sliced
2 tsp (10g) Light Brown Sugar
2 tsp (10g) Vegan Butter

Directions

1. In a pan melt the 2 tsp vegan butter. Add one banana that has been cut into slices. Sprinkle the slices with 2 tsp sugar and let cook on med heat for about 3-4 minutes or until browned and caramelized. Flip and repeat. Set aside.

2. In a large bowl, add the flour, baking powder, baking soda and salt. Mix until well combined.

3. In another bowl, mash 3 bananas and add the cane sugar. Mix until the sugar has dissolved. Add in the sour cream, plant milk, vanilla and melted butter. Mix well.

4. Add the wet ingredients to the flour mixture and mix until just combined and no remaining dry spots of flout remain.

5. Add in the chopped walnuts and mix through.

6. Pour the batter into a lined muffin tin filling each about 2/3 the way full. Top with a couple of the caramelized banana slices and bake at 400F for 20-22 minutes or until an inserted toothpick comes out clean .
