Banana Walnut Muffins
These taste just like little Banana Breads! I know some people don’t like Walnuts so they are easily left out or swapped for Chocolate Chips! These are easy to make and have a few extra special ingredients like caramelized Banana slices on top and the Sour Cream in the batter to help make them so moist.
Makes 8 Jumbo Muffins
Ingredients
2 cups of Flour
3/4 Sugar plus 2 tsp
2 tsp of Baking Powder
1 tsp of Baking Soda
1/4 tsp of Salt
4 Ripe Bananas
1/3 cup plus 2 tsp Vegan Butter ( I used Miyoko’s)
1/2 cup Vegan Sour Cream
1/2 cup Plant Milk
2 tsp of Vanilla
Optional: 1/3 cup chopped Walnuts
Directions
1. In a pan melt the 2 tsp of Vegan Butter. Add one Banana that has been cut into slices. Sprinkle the slices with 2 tsp of Sugar and let cook on med heat for about 3-4 minutes or until browned and caramelized. Flip and repeat. Set aside.
2. In a large bowl, add and combine all the dry ingredients.
3. Mash 3 Bananas and add them to the Sour Cream, Milk, Vanilla and 1/3 cup melted Butter
4. Combine the wet ingredients with the dry and ingredients and mix just until well combined
5. Add in the chopped Walnuts and mix through
6. Pour the batter into a lined muffin pan(s) filling each about 2/3 the way full. Top with a couple of the caramelized Banana slices and bake at 400 for 22 minutes or until an inserted toothpick comes out clean .
