Chocolate Chip Banana Bread w/ Cream Cheese Frosting
One of my favorite things is Banana Bread. I love it plain, with Walnuts or Chocolate Chips. I recently realized that I don’t make it enough. It’s such a versatile snack. You can have it for breakfast, with a cup of coffee or tea in the afternoon or slather it with frosting for a yummy dessert. It’s a great way to use up over ripe Bananas. Keep in mind the more ripe they are the sweeter they will be so you want to wait as long as you can before using them.
Makes about 8 - 10 slices
Ingredients
2 1/4 cups of Flour
3/4 cups of Sugar
1 tsp of Baking Soda
1/2 tsp of Baking Powder
2 Tbsp of Ground Flax + 6 Tbsp of Water
1/2 tsp of Cinnamon
1/4 tsp of Salt
1/3 cup Vegan Butter melted
3 very ripe Bananas mashed
2 tsp of Vanilla
1/2 cup Plant Milk
1 tsp of Apple Cider Vinegar
1/2 cup Vegan Chocolate Chips
Cream Cheese Frosting
1 container of Vegan Cream Cheese ( I used Follow Your Heart) at room temperature
1/3 cup Vegan Butter softened
1 cup of Powdered Sugar sifted
1 tsp of Vanilla
Directions
1. Mix together the ground Flax and Water and set aside to thicken
2. Mix the Flour, Salt, Sugar, Cinnamon, Baking Soda, Baking Powder and Chocoalte Chips for your dry ingredients
3. Mash the Bananas well and add them to the Melted Butter, Vanilla, Plant Milk and Flax Egg
4. Combine the wet mixture with the dry ingredients and mix together gently. If the batter is very dry add a Tbsp at a time of more Plant Milk as needed until it’s pourable
5. Pour the Batter into a loaf pan lined with a piece of parchment paper that is long enough to come up over both sides of the pan. This will allow for easy removal
6. Bake at 350 for 55- 60 minutes or until an inserted toothpick comes out clean
7. Make the Cream Cheese Frosting by sifting the Powdered Sugar into the Cream Cheese, Butter and Vanilla. Use a hand mixer to mix until smoth and creamy.
8. Allow the Banana Bread to completely cool before frosting
