Shakshuka

Shakshuka besides being fun to say it’s a classic North African and Middle Eastern dish. It’s typically served at breakfast but is also eaten for any meal of the day. It's made from simple, healthy ingredients and can easily be made Vegan.

Serves 3


 
 

Ingredients

3 Vegan Fried Eggs from All Vegetarian Inc ( you can use extra firm Tofu slices instead)

1/2 Small Onion

1/2 Red Bell Pepper

1 clove of Garlic

1 can of Chopped Tomatoes

1 Jar of Shakshuka Sauce from Mina ( you can subsitute a can of Tomato Sauce)

1 tsp of Smoked Paprika

1 tsp of Cumin powder

1/4 cup Fresh Parsley

Salt & Pepper to taste

Note: If you are using Tomato Sauce in place of the Shakshuka Sauce add in 1/4 - 1/2 tsp of Cayenne Pepper

Directions

1. In a cast iron skillet or non stick pan, Sauté the Vegan Eggs or Tofu in a bit of Oil. Season with Black Salt, Salt & Pepper and cook until the edges have browned. Set aside.

2. In the same pan, sauté the Onion, Garlic and Peppers until the Onions are translucent

3. Add in the chopped Tomatoes and Shakashuka Sauce as well as the spices and let simmer on med-low heat for 10-15 minutes

4. Place the Vegan Eggs (or Tofu) on top of the Sauce and continue to cook for another 5-8 minutes

5. Add in a generous amount of chopped Parsley

6. Serve with flat bread or slices of a hearty crusted bread
