Mediterranean Chopped Salad
So many yummy flavors going in this salad! One of my favorite things are the crunchy carrots. It’s super easy to make and very refreshing. I’m a big fan of recipes that let you use up a ton of ingredients in the fridge and pantry!
Serves 2
Ingredients
1 Avocado
1 Large Carrot
1 Medium Tomato
1 Small Cucumber
1 can of Hearts of Palm sliced
1 Tbsp of Capers
1/3 cup sliced Olives
1 Can of Garbanzo Beans
Juice from 1 Lemon
Drizzle of Grape Seed Oil (optional)
1/3 cup chopped fresh Parsley
1/3 cup chopped fresh Cilantro
Salt & Pepper to taste
Directions
1. Chop all the veggies into relatively the same bite size pieces
2. Make sure to deseed the Tomato
3. Add all the ingredients into a large bowl and mix well
Tip: add the Avocado right before serving
