Sausage White Bean & Kale Soup
This is a really yummy soup for lunch or dinner. It’s hearty enough to keep you full but still light enough to let you move around after!
Ingredients
1/2 Package of Light Life Vegan Sausage (comes in a roll)
1 can of Cannellini Beans
2 Ribs of Celery
2 Small Red or Gold Potatoes
2 1/2 cups of chopped Kale
1/2 Small Onion
2 Cloves of Garlic
1/2 tsp of Thyme
1/2 tsp of Oregano
1 Bay Leaf
2 tsp of Braggs Liquid Aminos (you can sub a light tamari / soy sauce)
4 cups of Water
1 cup of unsweetend Cashew Milk or other Nut Milk
Salt & Pepper to taste
Directions
1. Form small sausage balls from the sausage roll and sauté them until browned. Set them aside for later.
2. In the same pot, sauté the onion and garlic until onions are translucent
3. Add in the chopped potatoes and celery and cook on med-low heat for about 15 minutes. Add water as needed to not burn the veggies
4. Add the beans, seasonings and 4 cups of water. Lower heat, cover the pot and let simmer for 15 minutes
5. Remove the Bay Leaf and using an immersion blender, blend up about a 1/3 of the soup (this will help thicken it) If using a regular blender, blend about a cup of the soup with mostly the potatoes in it
6. Add in the cup of unsweetened nut milk and chopped kale and continue to simmer for 10 minutes
7. Lastly add in the cooked sausage and let it heat through before serving
Would be great served with crusty sourdough or garlicky toast
