White Bean Sausage Chili
White Bean Sausage Chili
This is a delicious alternative to traditional Vegan Chili. It’s packed with tons of protein, it’s savory and very comforting. I used Beyond Meat Sausage but any Plant Based Sausage will work. This recipe is super easy to make and the ingredients can easily be swapped out for what you have on hand.
Serves 4 - 5
Ingredients
3 cans of White Beans ( I used Northern, Navy and Pinto)
3 Vegan Sausage Links ( I love Beyond Meat Sausage)
1 small can of Hatch Green Chillies (not spicy)
1/2 Medium Onion
2 Green Onions (save the green parts for garnish)
3 Cloves of Garlic
3 Ribs of Celery
1 tsp of Better Than Bouillon Vegetable Base
2 1/3 Cups of Water
2 tsp of Thyme
1/2 tsp of Ground Sage
1 Bay Leave
Salt & Pepper to taste
Directions
1. Sauté the Onion and Celery until the Onions are translucent
2. Add in the Sausage that’s been chopped up and sauté until browned.
3. Add in the Garlic, Vegetable Base, the White part of the Green Onions, the Hatch Chillies as well as the Beans that have been drained and rinsed.
4. Add in the rest of the spices and continue to cook on med low heat for about 5-10 minutes.
5. Add in the water and cover the pot. Keep on med low heat and simmer for 30 minutes
6. Serve with chopped Green Onions
