No Tuna Cakes
This recipe actually started off as a Tuna Salad. I was trying a different Vegan Tuna from All Vegetarian Inc and decided that the texture would be great in cakes. I often make a Chic Pea Tuna-less Salad which you can find the recipe for here on the site. I’m guessing you could try using Chic Peas (very mashed) in place of the Vegan Tuna if it’s hard to find. It has all the deliciousness of a Tuna-less Salad but with an extra crisp from the quick fry and finish in the oven.
Makes 12-14 med cakes
Ingredients
20 oz of Vegan Tuna (I used All Vegtarian Inc but also love Good Catch Foods)
2 Celery Stalks chopped
1/3 cup Onion chopped
2 tsp of Capers
1 large Dill Pickle chopped (my favorite are Bubbies brand)
1/3 cup plus 2 Tbsp Vegan Mayo
1 1/2 Tbsp Yellow Mustard
1 Tbsp of Horseradish
1/2 tsp Old Bay Seasoning
2 Tbsp of Parsley chopped
Juice from 1/2 a Lemon
1/3 cup Bread Crumbs
1/3 cup Just Egg or 1 Flax Egg
Salt & Pepper to taste
Directions
1. In a large bowl mix together all of the ingredients.
2. Form smallish patties about the size of your palm. Make sure to gently pat them down to thin them out but do not make them flat.
3. Pan fry each patty on both sides for about 2 -3 minutes each or until there is a nice golden brown crust
4. Bake the patties at 350 for 15 minutes
Serve with a Vegan Tartar Sauce or Garlic Dill Miso Mayo as pictured
Tartar Sauce: Mix together 1/2 cup Vegan Mayo, Juice from 1 Lemon, 1 Pickle finely chopped and 1 tsp chopped Dill
