Miso Garlic Mushroom Pilaf
This did not last long around here! I may have to make a double batch next time!
Pilafs make great side dishes or even light meals. What makes a Pilaf is cooking the Rice with Broth and / or Veggies, so the flavor begin there. This is an easy recipe and can be made with any additional veggies or change up the almonds for walnuts or pumpkin seeds. Be creative!

Ingredients
1 cup uncooked Organic Long Grain Rice
1 tsp of Miso Paste
1 tsp of Garlic Base (from Better than Bouillion)
1/3 cup finely chopped Onion
16 oz sliced Mushrooms
1 tsp of Thyme
2 Tbsp of Black Garlic Miso (you can sub Miso Paste)
3 cloves of Garlic
1 Tbsp of Vegan Butter
1/4 cup sliced Almonds
2 Green Onions (green parts only)
Salt & Pepper to taste
Directions
1. Start by cooking the Rice according to package directions but add the Onion, Miso Paste and Garlic Bouillon Base to the water or vegetable broth
2. In a large skillet sauté the Mushrooms in the Butter along with the Thyme, Salt & Pepper
3. Once the Mushrooms begin to cook down and release their water add in the Miso Mayo and Garlic and continue cooking
4. In a large bowl add the cooked and fluffed Rice, sliced Almonds, Green Onions and mix well
5. Lastly drain off any excess liquid from the Mushrooms before mixing them in with the Rice
