Greek Tuna Orzo Salad

I love Greek Salad! The saltiness of the olives, briny feta and crunch of the veggies all dressed up with a tangy vinaigrette. I have to admit I can’t recall the last time I added tuna to it but now that we have vegan fish -free tuna and vegan von dairy feta all is possible!


 
 

Ingredients

1 cup dry Orzo ( you can sub any type of pasta you like)

2/3 cup Chopped Cucumber

1 Medium Tomato seeded and chopped

1/3 cup Pitted Kalamata Olives

1/3 cup Crumbled Vegan Feta ( I used Violife)

1 Package of Good Catch Fish-Free Tuna

Vinaigrette Ingredients

1/2 cup Red Wine Vinegar

1/4 cup Olive or Grape Seed Oil

1/2 tsp of Vegan Honey or Other sweetener

1 tsp of Dired Oregano

1 tsp of Fresh Chopped Dill

Salt & Pepper to taste

Directions

1. Cook the Orzo or Pasta according to package directions. Make sure to drain well

2. Add the chopped Tomatoes, Cucumber, Olives and Tuna to the Orzo and mix well

3. Crumble in the Feta and gently mix together.

4. Mix together the ingredients of the Vinaigrette (the recipe will make a bit more than needed)

4. Dress the Orzo Salad with the Vinaigrette according to taste. Add more fresh Dill and Dried Oregano for garnish
