Spicy Beef & Broccoli Noodles

It’s simple and delicious which is why it’s perfect for easy weekday lunches or dinners. I used a medium Chili Oil but you can make it as spicy as you like. It’s extra comforting with noodles but would go great over rice. Use what you have!

Ingredients

1 Package of Vegan Beef Chunks ( I like All Vegetarian Inc & Gardein)

4.5 oz of Wide Udon Noodles ( I used an Organic one from Koyo)

3 cups of Broccoli cut into florets ( I used frozen)

1 medium sized Knob of Ginger sliced

4 cloves of Garlic minced

3 Tsp of Light Brown Sugar

2 tsp of Rice Vinegar ( I like Marukan)

1 Tbsp of Tamari or light Soy Sauce

1/2 -3/4 cup Water

1 Tbsp of Cornstarch mixed w/ 1 Tbsp of cold Water (slurry)

Pepper to taste

Directions

1. Sauté the Garlic & Ginger in the Sesame Oil for a few minutes until fragrant

2. Add in the Vegan Beef and sauté on all sides until nicely browned

3. while the Beef is browning start cooking the Udon Noodles according to pacakge directions

4. Add in the Brown Sugar, Soy Sauce, Rice Vinegar, Chili Oil and about 1/2 the water. Let cook down on med-low heat, adding more water as needed

5. Make the Cornstarch slurry by combining 1 Tbsp of Cornstarch and 1 Tbsp of cold Water. Turn the heat up on the broccoli and beef and add the slurry

6. Add in the remaining Water and continue to cook the Beef and Broccoli mixture allowing the sauce to thicken

7. Add the cooked and rinsed Noodles to the pot and mix well. Let everything heat through before serving.
