French Toast

French Toast

This recipe uses Just Egg. If you haven’t seen or heard of Just Egg, it’s a Vegan liquid egg substitute. It’s been on the market for a little while and it’s becoming easier to find. It can be a bit pricey when not on sale so this recipe may be considered for more of a special occasion. I give an option for the batter using chic pea flour. Either option is delicious!



4 Slices of Bread ( I find sourdough, white mountain or any other white bread works best)

1/2 - 3/4 bottle of Just Egg

2 tsp of Maple Syrup (plus more to top)

1 tsp of Vanilla

1/4 tsp of Cinnamon

Pinch of Salt

Vegan Butter

Fresh Berries

Powdered Sugar


1/3 cup Chic Pea Flour

1 1/2 -2 cups of Plant Milk ( I like Silk Unsweetened Cashew Milk)

1/4 tsp of Cinnamon

2 tsp of Maple Syrup

1 tsp of Vanilla

Pinch fo Salt


1. Mix together the Just Egg, Maple Syrup, Salt and Cinnamon to form the batter

2. Dip each side of the bread in the batter and cook on med-high heat in the melted Butter

3. Cook for 3 minutes before flipping and cook for another 3 minutes or until golden brown

4. Serve with Fresh Berries, Powdered Sugar and Maple Syrup
