Croissant French Toast

French Toast is a classic comfort Breakfast. Sometimes only reserved for special occasions or when we go out to eat. It’s so easy to make that you should have it more often. How about indulging in some self care and treat yourself to a proper yummy Breakfast. While you’re at it why not make French Toast extra special and make it with Vegan Croissants. It’s still as easy to make but more decadent and delicious.

Ingredients

2 Vegan Croissants split in half (Whole Foods now carries them)

1/2 Bottle of Liquid Just Egg

1/2 tsp of Vanilla

Pinch of Nutmeg

Pinch of Cinnamon

Pinch of Salt

1 1/2 Tbsp of Vegan Butter ( I use Miyoko’s)

1 tsp of Maple Syrup plus more for serving

Optonal: Fresh Strawberries

Powdered Sugar

Directions

1. Add 1/2 a bottle of liquid Just Egg to a shallow wide dish or bowl. Mix in the Vanilla, Cinnamon, Salt and Maple Syrup.

2. Slice the Croissants in half and dip each side in the Vegan Egg mixture until well coated and some of the Egg has been absorbed.

3. Melt the Butter in a skillet on medium heat and add 1 -2 croissant halves at a time. Cook for 2-3 minutes on each side or until golden brown. Repeat with remaining pieces.

4. Top with Powdered Sugar, Fresh Fruit and Maple Syrup
