Roasted Potato Hash

This is the perfect addition to any breakfas situation. Roasting the potatoes first with a bit of thyme not only makes them tender but gives them added flavor.

Serves 2 - 4


 
 

Ingredients

1 Lb (454g) Golden Baby Potatoes or any small variety
8oz (226g) Baby Bella Mushrooms (or any variety)
1 small (75g) Green Bell Pepper, diced
1/2 small (40g) Onion, diced
2 tsp (5g) dried Thyme
1 tsp (5g) Garlic Powder
2 tsp (10ml) Oil
2 Tbsp (5g) Parsley, chopped
Salt & Pepper to taste

Directions

1. Roast the potatoes with a bit of oil, 1 tsp of thyme, salt & pepper at 350 for 40-45 minutes or until the potatoes are fork tender. Set them aside to cool slightly.

2. Sauté the onion and bell pepper until the onions become translucent, about 5-7 minutes.

3. Add in the mushrooms, remaining thyme, garlic powder and continue to sauté until the mushrooms have cooked down.

4. Cut the roasted potatoes into halves or quarters and add them to the sautéed vegetables.

5. Heat through, check for seasoning and adjust with salt and pepper if needed.. Lastly, add in the chopped parsley and mix well before serving.
