Roasted Potato Hash

This is the perfect addition to any Tofu Scramble, Chic Pea Omelette or the awesome Just Egg! Roasting the Potatoes first with a bit of Thyme makes them so tender and full of flavor.

Serves 2 - 4


 
 

Ingredients

1 Lb of Golden Baby Potatoes ( you can use any small potato)

1 package (8oz) sliced Baby Bella Mushrooms (you can use any mushroom variety)

1 small Green Bell Pepper

1/2 small Onion

2 1/2 Tsp of dried Thyme

1/2 tsp of Garlic Powder

2 Tbsp of chopped Parsley

Salt & Pepper to taste

Directions

1. Roast the Potatoes with a bit of oil, 1 tsp of Thyme, Salt & Pepper at 350 for 40-45 minutes or until the Potatoes are fork tender. Set them aside to cool slightly

2. Sauté the Onion and Bell Pepper until the onions become translucent

3. Add in the Mushrooms, Thyme and Garlic Powder and continue to sauté until the Mushrooms have cooked down

4. Cut the Potatoes into halves or quarters and add them to the sautéed Vegetables

5. Heat through and add in the chopped Parsley
