Tzimmes

Tzimmes is a sweetened stew of vegetables and fruit served during the holiday of Rosh Hashanah. The word in Yiddish translates to “fuss” and has been used in the expression “why are you making such a tzimmes?” It may mean fuss but I think it’s actually a really easy dish to make. I think there are people who love tzimmes and others who can leave it! For most people whether they like it or not find it quite nostalgic. It’s one of the sweet foods that usually uses honey and is enjoyed to help usher in a sweet New Year. This recipe was made with a Vegan Honey called Mellody Foods but there are a variety of Vegan Honeys available in grocery stores. You can always sub maple syrup.

Ingredients

4 medium Carrots sliced
1 large (420g) Sweet Potato cubed
1 small (200g) Onion cut into large pieces
8 pitted Prunes
8 dried Apricots chopped
1/3 cup (60ml) Orange Juice
1/2 cup (118ml) Water
1/3 cup (75ml) Vegan Honey or Maple Syrup
1 Tbsp (15ml) Oil
1/2 tsp (2.5g) Cinnamon
1/4 tsp Salt

Directions

1. Add oil to a large pot on medium low heat. Once heated, add in the onion and allow them to cook for 20 minutes or until they become lightly browned. Stir occasionally.

2. Add in the carrots, potatoes, brown sugar, water and orange juice. Stir well, cover and cook for 25 minutes.

3. Add in the cinnamon, chopped apricots and honey and continue cooking for another 25 -30 minutes or until the carrots and potatoes are fork temder.

4. Add in the prunes and cook uncovered for another 10-15 minutes or until everything is soft and the cooking liquid has either thickened or reduced. (If you prefer a thicker sauce cook for another 15 minutes).

5. Serve warm as a side dish to your Rosh Hashanah dinner.
