Maple Roasted Carrots

These make the perfect side dish to add to your Holiday table. They are so delicious and really easy to make that you’ll want to serve them any night of the week. They’re soft, perfectly sweet and have just the right touch of saltiness. You can garnish with any fresh herbs that you like and even add a pinch of Chili Flakes to give them a nice bite.

Serves 4 -6


 
 

Ingredients

3 bunches of Carrots with green tops ( or you can use 2 lbs of bagged carrots)

2 -3 Tbsp of Vegan Butter

1/3 cup plus Maple Syrup

1 -2 Tbsp of Brown Sugar

2 tsp of Grape Seed Oil

Salt & Pepper to taste

1-2 tsp of Parsley chopped

Maldon Salt to finish

Optional: 1/2 -1 tsp of Red Pepper Flakes

Directions

1. Mix the Maple Syrup with the Brown Sugar (add in red chili flakes if using) Set aside.

2. Wash and scrub the carrots well and trim the tops. If using larger bagged carrots then just wash and peel them and cut them diagonally into thirds.

3. Toss them with the Grape Seed Oil, Salt & Pepper and then place them on a large baking pan or dish in a single layer

4. Bake at 375 for 15 minutes. Flip the Carrots and pour the Maple Brown Sugar mixture over the Carrots. Lower the heat to 325 and continue to bake.

5. Check on them every 10 minutes and flip them. Continue baking until completely tender and caramelized. Add the Vegan butter in the last 10 minutes of baking. The total baking time will be about 30 - 45 minutes.

6. Top with a sprinkling of Maldon Salt and chopped Parsley or other fresh herbs before serving.
