Tomato Basil & Bean Salad
This salad has the deliciously epic combination of tomatoes and basil but with a little more! The addition of crunchy red onions and protein rich red kidney beans makes this salad a perfect option for a satisfying side or meal.
Serves 4
Ingredients
3- medium Tomatoes chopped
15.5 oz (439 g) Red Kidney Beans drained & rinsed
1/3 cup (18 g) Red Onion chopped
2 Tbsp (30 g) fresh Basil chopped
2 Tbsp (30 ml) of good Olive Oil
1 Tbsp (15 ml) Balsamic Vinegar
Salt & pepper to taste
Directions
1. Add the chopped tomatoes, red onions, basil, olive oil, vinegar and salt & pepper. Mix well.
2. Add in the red kidney beans and mix again. Serve by itself or as part of a larger meal.
