This tomato basil and bean salad takes the classic combination of juicy tomatoes and fresh basil to the next level. Ingredients
3- medium ripe Tomatoes, chopped
15.5 oz (439g) Red Kidney Beans drained & rinsed
1/3 cup (18g) Red Onion, thinly sliced into quarters
2 Tbsp (6g) fresh Basil, chopped
2 Tbsp (30ml) good Olive Oil
1 -2 Tbsp (15-30ml) Balsamic Vinegar
Salt & Black Pepper to taste
Serve with crusty bread for soaking up all the flavorful juices.
Directions
1. Add the chopped tomatoes, red onion, and kidney beans to a large bowl.
2.Pour in the olive oil and balsamic vinegar, then season with the salt and black pepper. Add the chopped basil and gently toss until everything is evenly combined.
3. Let the salad sit for 10 minutes to allow the flavors to come together. Serve as a side dish or enjoy as a light meal. Don't forget some crusty bread for soaking up the flavorful juices at the bottom of the bowl!
