Tomato Basil & Bean Salad
This salad has the deliciously epic combination of tomatoes and basil but with a little more! The addition of crunchy red onions and protein rich red kidney beans makes this salad a perfect option for a satisfying side or meal.
Serves 4
Ingredients
3- medium ripe Tomatoes, chopped
15.5 oz (439 g) Red Kidney Beans drained & rinsed
1/3 cup (18g) Red Onion, thinly sliced into quarters
2 Tbsp (30g) fresh Basil, chopped
2 Tbsp (30ml) good Olive Oil
1 -2 Tbsp (15-30ml) Balsamic Vinegar
Salt & pepper to taste
Directions
1. Add the chopped tomatoes, red onions, and kidney beans to a bowl.
2.Add the olive oil, balsamic vinegar, salt and pepper. Add in the chopped basil and mix well.
Serve as a side dish or enjoy as a light meal. Serve crusty bread to dip in the delicious juices left behind.
