Creamy Cucumber Salad
It’s creamy and crunchy with just a bit of tang. This creamy cucumber salad is extremely easy to make and is a great side dish on it’s own or add it to a larger salad. It would be a great addition to any picnic! For an extra zip feel free to add 1-2 tsp of dijon mustard or horseradish. Enjoy it at room temp or chilled.
Serves 2-3
Ingredients
1 medium Cucumber partially peeled and sliced
1/3 cup Red Onion sliced thin and cut in half
1/4 cup (60 g) Vegan Sour Cream
2 tsp of White Balsamic Vinegar
1 Tbsp (15 ml) good Olive Oil
2 Tbsp (30 g) fresh Dill chopped
Salt & Pepper to taste
Optional: 1-2 tsp (5-10 g) of Dijon Mustard or prepared Horseradish
Directions
1. To a large bowl, add the vegan sour cream, olive oil, vinegar, dill, salt & pepper and mix well.
2. Add in the sliced cucumber and onions and toss until well coated.
3. Enjoy at room temperature or chilled.
