White Bean Salad with Rosemary
I was once served this simple but so flavorful dish by friends while visiting them in Italy. It’s one of those dishes that just sticks with you. I’ve been making it ever since. It has just a few ingredients and keeps well in the fridge but I promise it won’t last long.

You will be doubiling this recipe the next time you make it!
Ingredients
Can of Cannellini Beans rinsed
1/2 cup Red Onion chopped
1 Tbsp fresh Rosemary chopped
1 Tbsp of good Olive Oil or Grapeseed Oil
2 Tbsp of Red Wine Vinegar
Salt & Pepper to taste
Directions
1. Rinse and drain the Cannellini Beans
2. Add the chopped Rosemary, Red Onion, Oil, Vinegar, Salt & Pepper and mix well
3. Let sit at room temp or refrigerated for at least 20 minutes for the flavors to meld
Serve as a side dish or with slices of grilled bread
