Thai Basil Seitan

This seitan dish comes together almost as quickly as you’ll want to eat it! It’s made with lightly seasoned seitan (I used one from Upton’s Naturals) making it the ideal canvas for this delicious and super flavorful recipe. The sauce is perfectly salty and tangy with tons of fresh aromatic Thai basil. It’s easy to make and is perfect served with your favorite variety of rice.

Ingredients

8 oz (227g) Seitan Chunks, roughly chopped
1 small (225g) Onion sliced root to stem (half moons)
1 small (215g) Red Bell Pepper sliced
6 cloves Garlic finely minced
1 -2 Thai Chilis (you can sub Chili peppers which look like Jalapeños and are much milder in heat)
1 cup (25g) fresh Thai Basil, packed (plus a few more leaves to serve with)
1 cup (237ml) Vegan Chicken or Vegetable Broth
2 Tbsp (30ml) Oil
2 Tbsp (30ml) Vegan Oyster Sauce*
1 Tbsp (15ml) Soy Sauce
1 1/2 Tbsp (23ml) fresh Lime Juice
2 tsp (10g) Cane Sugar
1 tsp (5ml) Dark Soy Sauce*
Salt & Pepper to taste
Cornstarch Slurry - 3 tsp (15g) Cornstarch mixed with 3 tsp (15ml) Water

Serve with Rice of choice and garnish with more chopped Thai basil

* Can be found in Asian markets and some grovery stores

This recipe was made in partnership with Upto’s Naturals, but feel free to use any brand of seitan you like.

Directions

1. Make the sauce by mixing together the soy sauces, lime juice, sugar, vegan oyster sauce, salt & pepper

2.Heat 1 Tbsp of oil in a large skillet on medium heat. Add the seitan chunks and cook until nicely browned, about 3-5 minutes. Remove from the pan and set aside.

3. Add the additional Tbsp of oil to the pan and add in the onions. Sauté for 3 minutes before adding in the red bell pepper, chili peppers and garlic. Continue cooking for another 3 minutes, stirring occasionally.

4. Cover with sauce and continue cooking for another few minutes. Add the browned seitan back and mix well. Add in the broth and mix well. Turn the heat to medium high and once everything starts to bubble add in the cornstarch slurry while mixing it through.

5.Add in the chopped basil and mix through. As it continues to cook the sauce will thicken and once it does, it’s ready to serve. Top each portion with a few more chopped basil leaves and serve with rice of your choice.
