Thai Peanut Slaw

This is a delicious take on traditional cole slaw. It’s crunchy and refreshing and has just the right amount of spicy Peanut flavor. Perfect as a side or for a full meal topped with slices of grilled tofu or vegan chicken. It was so good I just ate it as a salad!

Ingredients

12 oz (1 1/2 cups) bagged Cole Slaw mix or a mix of freshly shredded Cabbage(s)

1 large Carrot, peeld and grated

2 Green Onions sliced

1/3 cup Cilantro, chopped

2 Tbsp Thai Basil Leaves, chopped

1/3 cup (150g) Roasted Peanuts, roughly chopped

Peanut Dressing

3 Tbsp (45g) Peanut Butter

Juice from one Lime

2 tsp (10ml) Tamari or light Soy Sauce

1 tsp (5g) Tamarind Paste

1 Tbsp (15ml) Rice Vinegar

1-2 tsp (5-10g) Chili Paste ( or to desired heat)

2 tsp (10ml) Vegan Honey or Agave

1/2 tsp (2g) ground Ginger or freshly graded

2 Tbsp (30ml) oasted Sesame Oil

1/4 cup (59ml) Water

Pepper to taste

Directions

1. Roughly chop the shredded cabbage and add it to a large bowl. Add in the shredded carrot, green onions, cilantro, thai basil and peanuts.

2. In a cup, whisk together all the ingredients for the peanut dressing until well combined.

3. Pour the dressing over the vegetable mix and toss well. Serve immediately.
