Thai Peanut Slaw
This is a delicious take on traditional cole slaw. It’s crunchy and refreshing and has just the right amount of spicy Peanut flavor. Perfect as a side or for a full meal topped with slices grilled Tofu or Vegan Chicken. It was so good I just ate it as a salad!
Serves 4
Ingredients
12 oz (1 1/2 cups) bagged Cole Slaw mix or a mix of freshly shredded Cabbage(s)
1 large Carrot grated
2 Green Onions sliced
1/3 cup Cilantro chopped
2 Tbsp of Thai Basil Leaves
1/3 cup Roasted Peanuts roughly chopped
Peanut Dressing
3 Tbsp of Peanut Butter
Juice from one Lime
2 tsp of Tamari or light Soy Sauce
1 tsp of Tamarind Paste
1 tbsp of Rice Vinegar
1-2 tsp of Chili Paste ( or to desired heat)
2 tsp of Vegan Honey
1/2 tsp of ground Ginger or 2 tsp of Ginger Syrup
2 Tbsp of Toasted Sesame Oil
1/4 cup Water
Pepper to taste
Directions
1. Roughly chop the shredded Cabbage and add it to a large bowl. Add in the shredded Carrot, Green Onions, Cilantro, Thai Basil and Peanuts
2. In a measuring cup whisk together all the ingredients for the Peanut Dressing until well combined
3. Pour the dressing over the vegetable mix and toss well. Serve immediately.
