Spicy Peanut Noodles
This is one of the easiest and most adaptable recipes you’ll make. It uses almost all pantry and freezer ingredients. You can by all means use as many fresh ingredients as you have. Change up the veggies and type of pasta but keep the delicious Spicy Peanut Sauce!
Serves 2
Ingredients
2 packages of Ramen Noodles (no seasoning packet)
1/2 cup Mushrooms
1/3 cup Edamame
Peanut Sauce
3 Tbsp of Peanut Butter
2 Tbsp of Low Sodium Tamri or Soy Sauce
1 Tbsp of Rice Vinegar or Lime Juice
3 tsp of Sambal or Chili Paste ( you can sub chili flakes and adjust heat to your liking)
2 tsp of Beefree Honee or Maple Syrup
1/4 - 1/3 cup Water as needed
Sesame Seeds for Garnish
Directions
1. Cook the Pasta according to directions.
2. If using frozen Veggies, add them to the Pasta about two minutes before it’s done
3. In a small sauce pan combine all the ingredients for the Spicy Peanut Sauce. Mix well and heat until warm
4. Pour the sauce over the cooked Pasta & veggies and mix well
5. Garnish with Sesame seeds (green onions would be great too)
