Parmesan Thyme & Lemon Scones
I have to admit I’ve never made a savory scone. There are plenty of savory baked items out there but Scones are probably one of the easiest to make. There is really no kneading involved and they are beyond easy to shape. Easily change up the flavors by swapping the Thyme for Rosemary or the Parmesan for Cheddar. Serve them warm with a pat of Butter on their own or with Soup, Stew or Chili.
Makes 8 Scones
Ingredients
2 1/2 cups (300g) Flour
1 Tbsp (15g) Cane Sugar
1 Tbsp (15g) Baking Powder
1 tsp (5g) Salt
1 Tbsp (15g) fresh Thyme, chopped
1/2 -1 tsp Lemon Zest
1 1/3 cups (95g) grated Parmesan (Violife or Follow Your Heart are my favortes)
1 Flax Egg ( 1 Tbsp (15g) Flax Meal mixed with 3 Tbsp (45ml) Water)
3/4 Cup(177ml) Plant Milk
1 Tbsp (15ml) Apple Cider Vinegar
1/2 cup (115g) Vegan Butter (Cold)
Directions
1. Make the flax egg by combining the flax meal and water. Set aside to thicken.
2. Add the apple cider vinegar to the plant milk and set aside.
3. In a large bowl, combine the flour, salt, baking powder, sugar, thyme, lemon zest & pepper and mix well.
4. “Cut” in the cold butter into the flour mixture. (This can be done with a pastry cutter, food processor or even a potato masher) You want the flour to resemble the texture of very course or lumpy sand.
5. Add the flax egg to the plant milk before pouring it into the bowl with the rest of the ingredients.
6. Using a wooden spoon, mix the dough until it starts to come together. Add in the grated cheese and continue mix to form a dough
7. Pour out the dough onto a lightly floured surface. Gently fold the dough over a couple of times before forming it into a round disc about 8” wide and 1 -1 1/2 “ thick
8. Cut the disc into quarters and then cut the quarters in half to become a total of 8 triangles.
9. Spread them out onto a cookie sheet and bake at 375 for 25 - 30 minutes or until the edges are golden brown.
