Smoked Salt Chocolate Fudge

Would you believe that the only two ingredients that make up this deliciously creamy, decadent Fudge are vegan chocolate chips and sweetened condensed oat milk? That’s it! Of course if you want to count the salt then we’re at three, but still that’s it! Don’t skip on the dusting of smoked salt because it elevates the texture and truly makes it amazing! In addition to being absolutely delicious this fudge is like a blank canvas to make it your own. Toss in nuts such as pistachios or walnuts or customize the flavors by adding in extracts such as vanilla, maple or peppermint. The yummy options are endless!

Makes approximately 30 1” square pieces


 
 

Ingredients

11.25 oz (320 g) can of Sweetened Condensed Oat Milk ( I used Nature’s Charm)
14 oz (397 g) Vegan Chocolate Chips
Smoked or Plain Sea Salt ( I use Saltverk or Maldon) to taste
Optional: 1 tsp (5 ml) Vanilla

Tip: Line your pan with a piece of parchment paper that is longer than the edges of the pan. This will make it easier to lift out the fudge. You can secure the paper with a little bit of butter to keep it from sliding around while you pour in the fudge.

Note: The smaller the pan you use the thicker the fudge will be.

You can use other vegan sweetened condensed milks such as Coconut or Soy (hard to find for me) but I find the Oat Milk to be creamier over the Coconut.

Directions

1. Add the chocolate chips and condensed oat milk to a microwave safe bowl.

2. Heat in 30 second intervals and mix. Repeat until the chocolate is completely melted and everything is smooth and creamy when mixed together.

3. Add in any additional ingredients or extracts (if using) and mix well before pouring the mixture into a prepared baking pan /dish.

4. Refrigerate for 45 -60 minutes and cut into small squares. Dust with salt before serving. Best at room temperature.

Store refrigerated in an air tight container for 5 -7 days (it won’t last that long!)
