Magic Cookie Bars

They are not only incredibly yummy but quite nostalgic. I can remember having these as far back as my early childhood but it wasn’t until high school that i’d consider them my baking masterpiece! I would bake them for my crush and his mom who I knew had a sweet tooth! So what makes these magic cookie bars so magical? It’s the incredible layers, starting with crushed graham crackers, vegan sweetened condensed milk, vegan chocolate chips, flaked coconut and chopped walnuts. Baked until warm and gooey the textures and flavors are well, magical! These are very easy to bake and will put a smile on anyone you generously decide to share them with.

Ingredients

10 oz (283g) Vegan Semi Sweet Chocolate Chips
1/2 cup (115g) Vegan Butter, melted
1 1/3 cups (100g) Flaked Coconut
2 cups Vegan Graham Crackers (2 sleeves)
11 oz (320g) Non Dairy Condensed Milk (i used Natures Charm Oat)
1 cup (125g) Walnuts, chopped

Notes & Equipment

8x11 or 10x10 Baking Dish
Parchment Paper
Food Processor

I lined a lightly greased baking dish with parchment paper. Make sure the paper is long enough on the sides so that it hangs over the edges. This will allow to use them to lift out the baked bars.

Refrigerating the bars after they have cooled for at least an hour will help you cut the bars more easily.

Directions

1. Add the graham crackers to a food processor and pulse until sandy / crumbly. Add in the melted vegan butter and pulse again until just combined.

2. In a greased and lined baking dish add the mixed graham crumbs and gently pat down until smooth.

3. Add about 1/2 of the sweetened condensed milk and then layer on half of the chocolate chips, the flaked coconut and chopped walnuts. Top with the remaining sweetened condensed milk and more chocolate chips.

4.Bake at 350 for 25-30 minutes or until golden brown and the chocolate chips are melty.

5. Allow to cool for 30 -45 minutes before removing from the pan. Place them onto a baking sheet and chill in the refrigerate until set. This will make them much easier to cut.

6. Cut into 9 squares and serve either at room temperature or chilled. Store in the refrigerator for up to 5 days but they won’t last that long!
