Chocolate Pecan Pie

It’s that time of year to bring out your best pie recipes but why not try somethnig a little extra special? Pecan pie is a classic around the holidays and this version is just a bit more decadent with the addition of chocolate. It’s sweet, gooey and chocolatey, the perfect dessert to finish any meal.

Ingredients

Pie Dough to fit a 9” pie ( I used a pre-made one)
2 cups (225g) Pecan Halves
3/4 cup(155ml) Corn Syrup
3/4 cup (155g) Light Brown Sugar
1/2 cup (70g) Chocolate Chunks or Chips
1/4 cup (57g) Vegan Butter melted
2 Flax Eggs (2 Tbsp (30g) ground flax meal mixed with 5 Tbsp (75ml) Water)
3 Tbsp (45g) Cornstarch
1 1/2 tsp (7.5ml) Vanilla
1/2 tsp (2.5g) Salt

Chocolate Drizzle

1/3 cup (50g) chocolate chunks or chips
1 tsp (5g) Coconut Oil

You can add the drizzle before serving or before refrigerating, resulting in a solid chocolate coating

Note

You can use a pre-made pie dough or a pie crust shell or make your favorite pie dough.


Directions

1. Roughly chop about 1/2 cup of the pecans and mix them with the remaining pecans.

2. In a large bowl add the brown sugar, corn syrup, melted vegan butter, flax egg, vanilla, corn starch and salt. Mix well until there are no lumps. Fold in the pecans and chocolate chunks and mix well.

3. Place the pie dough into a 9” pan and carefully fit it to the edge of the pan. If desired make a simple scallop pattern. Prick down the dough with a fork. Pour in the pecan mixture.

4. Place the filled pie onto a baking sheet and bake at 325 for 55-65 minutes. After 20 minutes check to see if the crust is browning. If necessary to prevent it from burning, place foil over the crust for the remaining baking time.

5. Allow the pie to cool for at least 2 hours before placing in the refrigerator overnight which is recommended.

6. Remove the pie from the refrigerator about 15 minutes before serving. Melt 1/3 cup chocolate chunks with 1 tsp coconut oil, in the microwave for 20 second intervals until melted. Drizzle the melted chocolate over the pie before serving.
