Salad Niçoise
This Classic French Salad has truly been veganized thanks to the innovation of Good Catch Food’s Fish -Free Tuna! Swapping the Egg for Avocado was a no brainer.
Ingredients
1 Package of @goodcatchfoods (I used the Oil & Herbs flavor)
Romaine Lettuce
1 small Tomato cut into Wedges or 1/3 cup Cherry Tomatoes
2/3 cup Cooked Green Beans
2 Small Red Potatoes
Kalamata Olives
1/2 Avocado
Salt & Pepper to taste
Lemon Turmeric Dressing from Primalkitchen.com
This will serve 1-2 people although the Vegan Tuna package is a single serving
Directions
1. Boil the Potatoes and Green Beans
2. Assemble all of the ingredients seperately on a bed of the Romaine Lettuce
3. Salt & Pepper all of the Veggies
4. Serve with a light vinaigrette such as the Lemon Turmeric from Primal Kitchen Foods or Lemon/Lime Juice
