Black Bean Chopped Salad

This may be my new favorite Summer salad! It’s filled with fresh veggies like red pepper, avocado, cucumber and fire roasted corn. It also has little salty bits of Vegan feta cheese and is tossed in a light, tangy, slightly sweet cilantro and lime dressing which perfectly compliments all of the wonderful flavors. Make this salad for a satisfying lunch or as part of a dinner, I’ve even enjoyed it over tacos.

Ingredients

2 Hearts of Romaine chopped (275g)
1 can (425g) Black Beans rinsed and drained
1 cup (115g) Cherry Tomatoes cut into quarters
1 Green Onion sliced
1/2 cup (65g) Red Onion Diced
1/2 cup (100g) Red Pepper diced
1 cup (130g) Cucumber seeds removed & chopped
1 Avocado cubed reserve 1/4 piece for dressing
2/3 cup (70g) Vegan Feta Cheese
1/2 cup (75g) Fire Roasted Corn

Cilantro Lime Dressing
small Bunch (25g) of fresh Cilantro
2 cloves of Garlic
1/4 piece of a small Avocado
1/2 tsp (2.5g) Cumin Powder
Juice from a Lime
1 1/2 Tbsp (23 ml) Vegan Honey (or other sweetener like maple syrup or agave)
1/4 - 1/3 cup (60ml - 78ml) good Olive Oil
3 Tbsp (45ml) Water
Salt & Pepper to taste

Directions

1.Make the dressing by adding to a blender; the cilantro, 1/4 piece of the avocado, garlic, cumin, salt, pepper, lime juice, water and oil (start w/ 1/4 cup oil and add more if needed). Blend until smooth and creamy. Set aside.

2. Chop all of the veggies and add them to a large bowl. Add in the black beans, avocado, vegan feta and about half of the cilantro lime dressing. Toss well and serve with additional dressing.
