Pesto sauce is not only for pasta. Try it on French Fries, Baked Potatoes or Pizza! The pesto recipe is easy to make and will keep in your fridge for up to a week. This French Fry recipe used less than half.
Frozen French Fries of Choice (make as many servings as you like)
1/4 - 1/3 of the package of Violife Vegan Feta Cheese
For the Pesto
2 cups of Fresh Basil Leaves
1/3 cup of Pine Nuts
2 cloves of Garlic
2/3 cup of Grated Vegan Parmesan Cheese (I like Follow Your Heart and Violife Brands)
1/3 -1/2 cup Grape Seed Oil or Olive Oil
Salt & Pepper to taste
1. Make the Pesto by combining the ingredients in a food processor and pulsing until well combined. While the food processor is running add in the oil 1/3 cup at a time until the pesto comes together into a loose paste.
2. Bake the French Fries according to the package directions and then toss them with a few Tbsp of the Pesto and bake for 4-5 minutes at 400
3. Once the Fries come out of the oven crumble the Feta over and add a few more dollops of Pesto
