Marinated Chickpea Salad
I’ve been making this simple and flavorful salad since my best friend’s mom made it for me in high school! It has just a few ingredients and is so delicious. I typically will add it to part of a larger salad. One of my favorite ways to enjoy it is over warm rice. There is something so satisfying about blending the cool salad with the warm rice and mixing the two textures. It’s really so good, I hope you give it a try!
Serves 3-4
Ingredients
16 oz (440 g) Chickpeas or Garbanzo Beans
1/3 cup fresh Cilantro chopped
1 1/2 -2 Tbsp (23- 30 ml) good Olive Oil
Juice from a small Lemon or Lime
Salt & Pepper to taste
Directions
1. Drain and rinse the chickpeas (if using canned) and add them to a large bowl
2. Add in the oil, salt, pepper, cilantro and lemon juice. Mix well.
3. Refrigerate or let stand at room temp for 20 minutes.
Serve as a side dish, as part of a larger salad or over warm grains such as rice.
