Silken Tofu Salad

Soft tofu has a wonderful silky texture that’s delicious specially when chilled. This is one of my favorite savory breakfasts. It’s light, refreshing and you can make it as spicy as you like or not at all if that’s not your thing! It’s packed with protein and makes a great breakfast or lunch and takes about 10 minutes to make.

Ingredients

16 oz ( 454 g) Silken or Soft Tofu
1/2 small Cucumber seeded and sliced
1 Avocado cubed
2 Green Onions (reserve some of the green parts for garnish)
1 tsp Toasted Sesame Seeds

Dressing
1 Tbsp (15 ml) Sesame Oil
2 tsp (10 g) Chili Crisp
1 Tbsp (15 ml) Rice Vinegar
1 Tbsp (15 ml) Black Vinegar
1 Tbsp (15 ml) Soy Sauce
White Pepper to taste

Toppings
Chili Threads
Nori / Seaweed cut into small strips

Directions

1. Whisk together the ingredients for the dressing and set aside.

2. Add the avocado, cucumber and green onions to a bowl and toss with the sesame seeds.

3. Drain the tofu and place it onto a plate. (you can cut it into slices, halves or quarters ) Add the avocado and cucumber mixture around the tofu and pour over the dressing.

4. Top with nori strips, chili threads and green onions before serving.
