Hearts of Palm Ceviche
There is a whole lot of flavor in this fish free version of Ceviche. It’s a perfectly delicious snack for this Summer heat. It’s an easy and simple recipe that requires absolutely no hot oven or stove to deal with. With just a little chopping you’ll hopefully be enjoying this outdoors or poolside in no time.
Serves 3-4
Ingredients
1 can of Hearts of Palm diced
1/2 cup Tomatoes diced ( I used Organic Heirloom)
1-2 Jalapeños finely diced (depending on your heat preference)
1/3 cup Red Onion finely chopped
1/2 Avocado chopped
1/3 cup fresh Cilantro chopped ( you can add more to your liking)
Juice of a Lime
Juice of 1 Orange
Juice of 1/2 a Lemon
Salt & Pepper to taste
Directions
1. In a large bowl add the chopped Hearts of Palm, Red Onion, Jalapeño, Tomato, Avocado and Cilantro and mix well.
2. Add the Citrus Juices, Salt, Pepper and mix well.
3. Refrigerate for at least 30 minutes - 1 hour to let the flavors blend.
4. Serve with Plantain Chips
